An Old Recipe
Last couple of days .. I have been cooking and trying my best to perfecting an old recipe which I used to cook back when I was in high school… the taste still taste the same however the spiciness and flavor doesn’t seem to stay consistent. The color of the dish resulted from the Thick Soya Sauce seems fine, the amount of chili is and has always been the same.
Name of Dish: Black Spicy Chicken
Recipe:
Chicken Preparation – Seasoning ( 15-30 mins – 1 hours)
1 tray of boneless chicken / chicken fillet ( 470 grams) – Dice or in small pieces
2 pinches of Salt and Ground Pepper
4-5 teaspoon of Sesame Oil
1 teaspoon of Cooking Oil (Sunflower)
1-2 teaspoon of Dark Soya Sauce
Put in a chiller
Gravy:
50-100 grams of Mixture Onions and Garlic
1 cup of Blended Grounded Chili (Cili Gilling) – Depending on how much chili you can take in …
1/2 cup of Dark Soya Sauce
4-5 teaspoons of Cooking Oil
pinch of Salt and 3-4 pinches of Grounded Pepper
Cooking Method:
Prepare the chicken by mixing all the ingredients as mentioned above after dicing the chicken, mix the well until the chicken is well covered in the ingredients. Let it rest for approximately 15-30 minutes to an hour
For better results, store in a chiller if available
1. Heat a Medium – Large Pan with oil until hot
2. Put in Onions and Garlic, stir fry until fragrant
3. Salt and Pepper and continue to stir fry for 2-3 mins
4. Pour in Chili (1 cup), stir fry and cook till chili is cooked, flavor is out and mild dryness
5. After Chili has been cooked, you may add 1 teaspoon of Sugar to decrease the spiciness, then add the Dark Soya Sauce to the chili, stir until all contents are mixed properly.
6. Put in seasoned chicken and stir fry mildly to ensure the chicken is mixed into the gravy
7. Let the contents simmer on low heat (ensure the heat / fire level is low for better taste)
8. Once chicken is cooked, and the contents are dry, turn off heat and dish out the chicken.
9. You may add some other ingredients such as slices of tomatoes, or parsley for added flavoring or just to look good
… You’re done.
The best way to eat this is with White Rice, no Fried Rice or Noodles …
You can also go with White Bread/Buns.
